How are YAKERS made?
Still made the traditional way, starting with fresh Yak milk from Himalayan herders and local dairies, Yakers chews undergo a unique coagulation and compression process to create these tempting treats.
Step One – The Milk: Yak milk gets delivered from Yak farms, local dairies and individual herders in the Himalayas
Step Two – Turning the Milk into Cheese: The cream is removed, making these delicious treats low in fat. A very small amount of lime juice and salt is used to coagulate (harden) the milk.
Step Three – Cheese Compression: The coagulated solids are compressed in muslin cloth until most of the moisture has been removed. Formed blocks are left to rest until they are ready to be cut.
Step Four: Cutting and Smoke Drying: The chews are naturally smoke dried for 28 days, while being hung or on a wire grid in smoking sheds.
